Description

AROMA AND TASTE
Fragrant, spice-drawer, orange citrus and cassis aromas which carry through to a palate
that is fresh and defined with flavours of blackberry and brambles, savoury notes and a
positive structure of supple, well bound tannins. Fine and long on the finish.
VINEYARDS
Grown in our organically certified vineyards located on an elevated inland terrace of the
Waimea Plains beneath the foothills of the Richmond Ranges. This ancient alluvial
terrace of clay-rich loam and river stones over deep gravels is free draining and warm.
The 2021 season was very low yielding resulting in an early harvest and producing ripe
fruit flavours and concentrated wines. As a result of these low yields a number of pinot
clones were harvested together and co-fermented rather than individually as is our usual
practice. Vine age 14-28 years.
WINEMAKING
Harvested 9-15 March 2021. Short ambient pre-fermentation soak of 1-3 days with
single pump over. Fermentations were inoculated with selected yeasts. Punch downs
daily during primary fermentation. Time on skins 9-19days. Eleven months in 228 and
500 litre French Oak (10% new). Natural MLF completed spring/early summer in
barrel. Blended late February 2022 and held on light lees in tank for a further period
before bottling in October. As this wine is bottled without fining or filtration a small
amount of natural sediment may form with time.
